Easy Oven-Baked Vegan Gnocchi Recipe

Description

This easy vegan gnocchi recipe is made with a creamy sauce, broccoli, butter beans and of course gnocchi. It’s super high in protein, making it a great post-workout meal!


Ingredients

Scale

For the sauce:

  • 2 grilled peppers from a jar
  • 4 sun dried tomatoes
  • 1/2 lemon, juiced
  • 1 clove of garlic
  • 8.8 oz (250 grams) firm tofu
  • 1 1/3 cup (300 ml) water
  • A pinch of salt and black pepper

The rest of the ingredients:

  • 4 cups (500 grams) uncooked vegan gnocchi
  • 1 broccoli, in florets
  • 1 1/2 cup (250 grams) cooked butter beans
  • 6 olives, into quarters 
  • Fresh basil
  • Extra virgin olive oil, optional
  • Vegan parmesan cheese, optional

Instructions

  1. Preheat your oven to 200 degrees Celsius (392 Fahrenheit).
  2. Add all of the sauce ingredients to a blender and blend until smooth. 
  3. Add the gnocchi, broccoli, butter beans and olives to a (non-stick) baking dish. Pour over the sauce and mix until evenly coated.
  4. Bake in the oven for 25-30 minutes. 
  5. Serve with fresh basil. Optionally, top with the extra virgin olive oil and some (homemade) vegan parmesan cheese.
