Description
This easy vegan gnocchi recipe is made with a creamy sauce, broccoli, butter beans and of course gnocchi. It’s super high in protein, making it a great post-workout meal!
Ingredients

For the sauce:
- 2 grilled peppers from a jar
- 4 sun dried tomatoes
- 1/2 lemon, juiced
- 1 clove of garlic
- 8.8 oz (250 grams) firm tofu
- 1 1/3 cup (300 ml) water
- A pinch of salt and black pepper
The rest of the ingredients:
- 4 cups (500 grams) uncooked vegan gnocchi
- 1 broccoli, in florets
- 1 1/2 cup (250 grams) cooked butter beans
- 6 olives, into quarters
- Fresh basil
- Extra virgin olive oil, optional
- Vegan parmesan cheese, optional
Instructions
- Preheat your oven to 200 degrees Celsius (392 Fahrenheit).
- Add all of the sauce ingredients to a blender and blend until smooth.
- Add the gnocchi, broccoli, butter beans and olives to a (non-stick) baking dish. Pour over the sauce and mix until evenly coated.
- Bake in the oven for 25-30 minutes.
- Serve with fresh basil. Optionally, top with the extra virgin olive oil and some (homemade) vegan parmesan cheese.
