If you’re a bit skeptical about cauliflower steaks, that’s okay. I used to be as well. Obviously, it’s not meant as a substitute for animal based steaks. It’s a whole lot healthier though, plus it comes without any animal suffering. You don’t really have to be a vegan to see that as a big plus. These Vegan Cauliflower Steaks also don’t taste like a ”regular” steak. They taste better. By using different spices and some other staple ingredients, we are making a rub to coat the cauliflower with. Then they are simply baked in the oven until they are lovely and tender and slightly charred on the edges. Trust me, these Vegan Cauliflower Steaks will have you drooling. And paired with our super easy, quick and delicious homemade chimichurri, you are in for a real treat.

The Ingredients

  • Cauliflower – Cut into thick steaks. See below how to cut a cauliflower into steaks.
  • Spices – Garlic powder, onion powder, (sweet) smoked paprika and dried oregano.
  • Tomato paste – Mixed with the spices, essentially making it a rub. Time to get your hands dirty and give those good ol’ cauliflower steaks a massage!
  • Extra virgin olive oil – Essential for making a super delicious chimichurri to go with these Vegan Cauliflower Steaks.
  • Red wine vinegar – Adds a slight kick and touch of acid to the chimichurri.
  • Parsley – The main ingredient in the chimichurri.

How To Cut Cauliflower Steaks?

  • Step 1: Trim the green parts.
  • Step 2: Trim the bottom part. Careful not to trim too much though, otherwise the steaks won’t hold together.
  • Step 3: Remove any leftover bits until the cauliflower looks something like this.
  • Step 4: Trim the florets on all of the sides until there’s nothing left but the part that’s attached to the stem.
  • Step 5: Cutting from the bottom part, cut into roughly 1 to 1,5 inch (2,5 – 4 cm) thick steaks.
  • Step 6: Repeat until out of cauliflower. Depending on how large the cauliflower head is, you should be able to get anywhere from 2 to 3 steaks.

Tip: Store the leftover cauliflower in the fridge and make our Cauliflower and Chickpea Curry with Rice the next day.

Substitutions and Variations

  • Spices – You can really go crazy here and use whatever spices you may like.
  • Make it smokey – If you want to go the extra mile, you can add a dash of liquid smoke to the seasoning rub that goes onto the cauliflower steaks.
  • Sauce – These Vegan Cauliflower Steaks really are delicious with the homemade chimichurri. However, they also work really well with other sauces such as BBQ sauce, peanutsauce, garlic sauce or even tzatziki.

For the Vegan Cauliflower Steaks:

  • 2 medium heads cauliflower
  • 2 tsp (sweet) smoked paprika powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • Pinch of black pepper
  • 2 tsp tomato paste
  • 2 tbsp olive oil

For the Chimichurri:

  • 1/6 cup (10 grams) flat leaf parsley
  • 1/2 red chili 
  • 1 small clove of garlic
  • 1 tsp oregano
  • 1 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil 
  • 1/4 tsp salt

Instructions

  1. Preheat the oven at 200 degrees Celsius or 390 Fahrenheit.
  2. Remove all of the leaves/greens from the cauliflower. Remove the bottom part of the stem (see the step by step part above on how to cut cauliflower steaks). 
  3. From the bottom, cut the cauliflower into 1/1,5 inch (2,5 – 4 cm) steaks. 
  4. Place the cauliflower steaks on a baking tray lined with parchment paper.
  5. In a small bowl, combine smoked paprika, garlic powder, onion powder, 1 tsp of oregano, 1/2 tsp salt, black pepper, tomato paste and 2 tbsp of olive oil. Mix well. 
  6. Divide the mixture onto the cauliflower steaks and massage really well, careful not to break/tear the steaks. Make sure to rub it onto both sides of the cauliflower, as well as the top.
  7. Bake in the oven for 40 to 45 minutes, carefully flipping the cauliflower steaks halfway through. 
  8. In the meantime, make the chimichurri. Finely chop the parsley and the red chili. Grate the garlic clove. Add everything to a small bowl. Add all of the remaining chimichurri ingredients and stir until combined. 
  9. Place the roasted cauliflower steaks on a plate and serve with the chimichurri. Enjoy!
