You absolutely do not need any cheese whatsoever to make your own delicious pesto. You don’t even need pine nuts necessarily. Admittedly, pine nuts are delicious and are a great for making pesto. However, we wanted to take it a little off the beaten path which is why we use pumpkin seeds in this recipe. They help to make a gorgeous looking green pesto and are a lot more affordable. You will need 7 ingredients and 5 minutes to make this recipe. You will also need a food processor or a high speed blender. Alternatively, you can go old school and use a pestle and mortar and get those muscles working. This method will require a little bit more of your time though. Either way, you will end up with an easy and delicious vegan green pesto!
All of the Ingredients
- Pumpkin seeds – when roasted have a delicious nutty and savoury flavour which makes them a great base for our green pesto.
- Nutritional yeast – as we are obviously not using any cheese, we add nutritional yeast instead which is a great plant-based substitute.
- Garlic – can pesto without garlic even be considered pesto?
- Extra virgin olive oil – if you were hoping to find an oil-free pesto here, I apologise. This isn’t that. However, if you weren’t looking for an oil-free pesto, this one will be right op your alley because we are not doing any concessions on taste and texture by using some quality extra virgin olive oil.
Cooking Tips
- If you are using a blender to make the pesto, add the wet ingredients first before adding the dry ingredients. This will help speed up the process as it will make it easier for the blender to do it’s work.
- You might want to scrape down the sides of your blender or food processor a couple of times during the process, as some bits will stick to the sides.
- Depending on how smooth or chunky you want your pesto to be, you can choose to only pulse a couple of times for a chunkier pesto or blend for longer for a more creamy and smooth result.
Substitutions and Variations
- Pumpkin seeds – you can obviously go more traditional and use toasted pine nuts instead.
- Parsley – again, you can go more traditional and use fresh basil instead. Or make your pesto middle-eastern inspired and use fresh mint!
- Nutritional yeast – if you are feeling fancy, you can also add some plant-based parmesan cheese. Or sub the nutritional yeast for plant-based parmesan cheese.
